Can the author be removed in Blog pages?

There doesn't seem to be an easy way to change authors or hide the author information in Blog posts. The only option I've found is to create a new user and that isn't really a great way to handle this issue. I've tried 2 plugins designed to hide the author information altogether. One worked well but caused other problems. The other only removed the author name and left the word "by" Any suggestions on how to 1) hide author information (including the word "by") and 2) Change authors without having to create a new user every time?
