How to log outgoing messages sent through PHP mail?

Greetings,

I have several third-party developed web apps in a shared server. I would like to save a copy of sent messages through PHP send mail functions to the address that is in the to field or something similar that allows me to see the sending statistics mostly and contents of messages preferably. Thanks for any advice.
