Clients are not getting confirmation emails sent by EasyAppointments.

I see this message in /public_html/dev/storage/logs/log-2024-01-12.php:
   ERROR - 2024-01-12 09:13:19 --> Email could not been sent. Mailer Error (Line 166): Could not instantiate mail function.
What could be causing this?
